The Santoku Knife is a general-purpose kitchen knife originating in Japan. Its blade is typically between 13 and 20 cm long, with a flat edge and a sheepsfoot blade that curves down to the point.

The Santoku’s blade and handle are designed to produce a well-balanced knife. The name Santoku refers to the three cutting tasks which the knife is optimized for: slicing, dicing, and mincing.
