A mezzaluna is a knife consisting of one or more curved blades with a handle on each end, which is rocked back and forth chopping the ingredients below with each movement. Usually single bladed, they may also have two or three blades. Generally used for mincing herbs or garlic, it is also used for cheese or meat. Large single-bladed versions are used for pizza. Commonly used in Italy include for soffritto or pesto. Mezzaluna means "half moon" in Italian, after the curved shape of the blade. Other names include herb chopper or hachoir, the French name.
